James Diggs, Acqualina’s Food and Beverage Manager, is known for making some of the best drinks in town. As a seasoned sommelier and mixologist, he left his mark on this city’s trendiest cocktail menus and wine lists before joining the resort and taking the reigns as our wine and spirits specialist.
With such a vast wealth of knowledge, we couldn’t let James keep this information to himself. Hosting Acqualina’s first ever Cocktail Class, James gave a group of six ladies the liquid confidence to master his resort-life inspired creation, Everything Happens for a Riesling. You may have guessed from the name, this cocktail is wine-based, because who doesn’t love a glass of wine when lounging poolside?
We are excited to share his latest recipe with you, so you can get behind the bar at home and create this Miami style cocktail, wherever you may be.

Ingredients:
5 – ounces of Semi Sweet White Wine (Riesling is suggested)
¾ – of an ounce of St. Germaine Elderflower Liquor
7 – mint Sprigs
1 – 3 inch by 3 inch square of watermelon (diced)
5 – thin slices of cucumber
Method:
Combine all ingredients in a mixing tin
Muddle well
Add ice
Shake well until the tin is frosted
Strain into desired glass over ice
Garnish with your fruit of juice (starfruit is recommended)
